Breakfast Burritos in a Snap

My wife brought home a ton of tortillas, so I have been whipping these up for the family. So easy to make, but thought I would do up a quick post to serve as a meal idea. I am a salsa lover, so these also serve as a great salsa delivery mechanism 🙂 Pictured is some spicy tomato and pepper salad, which I use as part of the filling — no need for extra chopping, and rounds out the taste.

Fast, Easy Breakfast Burritos

These are too easy not to make and serve as a vehicle for your favorite salsa

Equipment

  • Flat cast iron skillet / griddle
  • non-stick frying pan for cooking eggs and reheating sausage

Ingredients

  • 1 egg 1 egg per burrito
  • 1 flour tortilla taco size works well for single serving
  • 1 sausage patty, thawed make a batch ahead of time and store in fridge
  • 1/4 cup cheese I use American or cheddar, depending on family member
  • 1/2 tbsp butter

Instructions

  • Heat the nonstick frying pan on low heat. Melt 1/2 tbsp butter, scramble the egg and add to pan. Place skillet on separate burner and turn to low heat.
  • Crumble the sausage and cheese and add to pan. Fold lightly as it cooks with a spatula or wooden spoon. Cook until mostly solid and turn off heat. Leave on burner and cover.
  • Add the contents to the center of the tortilla
  • Fold each side of the tortilla inward into a very slight v shape toward you.
  • Grab the back of the tortilla and roll toward you, and wrap around contents. Keep rolling toward center to tighten, pushing inward on the sides, and form a tight tube. Place on hot skillet.
  • Cover with a lid and let toast for 60 seconds.
  • Flip and repeat.
  • Transfer to a plate and serve while hot. Enjoy with your favorite salsas
