Heat the nonstick frying pan on low heat. Melt 1/2 tbsp butter, scramble the egg and add to pan. Place skillet on separate burner and turn to low heat.
Crumble the sausage and cheese and add to pan. Fold lightly as it cooks with a spatula or wooden spoon. Cook until mostly solid and turn off heat. Leave on burner and cover.
Add the contents to the center of the tortilla
Fold each side of the tortilla inward into a very slight v shape toward you.
Grab the back of the tortilla and roll toward you, and wrap around contents. Keep rolling toward center to tighten, pushing inward on the sides, and form a tight tube. Place on hot skillet.
Cover with a lid and let toast for 60 seconds.
Flip and repeat.
Transfer to a plate and serve while hot. Enjoy with your favorite salsas
